We are ALWAYS trying to get healthy and trying out new recipes! This one is one of my kid's (and mine) favorites! It's quick, tasty and great on the go! Vegan, Dairy Free, Gluten Free and Low Carb! And packs a great punch of protein! 

5 Ingredient Peanut Cup Energy Bites

EASY, 5 ingredient peanut butter energy bites sweetened with dates and studded with oats, dark chocolate and chia seeds! Full of fiber, protein and healthy fats.

Serves: 15
Ingredients
  • 1 cup (~220 g) dates, pitted (if dry, soak in warm water for 10 minutes, then drain well)
  • 3 Tbsp all natural salted peanut or almond butter
  • 1/4 cup dairy free dark chocolate, roughly chopped
  • 1 Tbsp chia seeds (or sub flax or hemp seeds)
  • 2/3 cup gluten free rolled oats
Instructions
  1. Pulse dates in a food processor or blender until they’re in small pieces or it forms a ball (see photo).
  2. Add oats, chocolate, chia seeds and peanut butter and pulse or mix until combined. You want there to be consistently small pieces but not overly processed.
  3. Carefully roll into 1-inch balls (29-30 grams per ball), using the warmth of your hands to mold them together. Should yield 14-15 balls.
  4. To set, pop in fridge or freezer for 15 minutes. Otherwise, eat as is! Will keep fresh in an air-tight bag or container for up to a week. Freeze for longer term storage.

Good Morning!!! One of my favorite things to do is drink coffee....well in the last few years, I have discovered the most amazing coffee ever!!! I mean an AAAHH-MAAAZZING cup of joe that is gonna blow your mind! BPC-Bullet Proof Coffee!! and if you haven't tried it, you must! I add something that might sound a little crazy but it's gonna change your world! BUTTER! yep, I said BUTTER! If you haven't heard of it or tried butter in your coffee, ya gotta try! It will give you the most energized start to your day! I'm talking pure clean energy without all the jitters! Well actually, there are 2 ingredients needed for BPC- Butter and Coconut oil(or MTC oil)! For the past few years, I've had a cup of BPC every day....well almost every day! And I love it! It curbs my sugar cravings, fills me up with good healthy fats and helps me start my day energized!

Quick history on BPC-David Asprey created BPC while on his journey to discover self awareness, inner peace, yadda yadda...but he drank a cup of tea with butter in it while in Tibet. While he thought it was strange, he researched it and found out why. He became the founder of Bullet Proof Coffee and recently opened up Bullet Proof Coffee Shop in Santa Monica, CA.

So why butter? well the simple science behind it is that it curbs your appetite, aids in weight loss, and provides you with a longer lasting coffee buzz thus giving you more energy. Asprey states the importance of MCT oil that aids in brain focus. I personally use coconut oil  and have yet to try MCT oil but they work kind of the same way, IMO. I also add a few drops of Stevia for sweetness. It's a lot better than the chemical junk and sugar I was drinking in my coffee before BPC.

So other than curbing my appetite, more energy and mental focus, I also love that it curbs the jittery side effects of coffee. The caffeine binds to the fats (butter and oil) to even out the buzz and make it last. I know there is a lot more fat in a cup of BPC (65 grams to be exact) but it's saturated fat and I use it as a meal replacement. It looks and sometimes tastes like a latte. I love the creamy frothy goodness I get when I blend it! I have a video of the process of making it and will search for it or make a new one to show you how I make my BPC! Be looking for it soon!:)

Hello everyone! I took a break! a loooooong break! about 4 yrs!! I just got so busy, so consumed with homeschooling the girls that I never really got time to sit down and blog! So here I am 4 yrs later, with a little more time on my hands and a plethora or new ideas to share with you!!

Well, we've been busy for the past 4 yrs. We've moved into our new (and forever) home, passed 3rd and 4th grade, and have made several trips to New England, Florida and North Carolina. I'm still homeschooling, hubby is still working at the same workplace only with a different position, and I'm still singing, painting and 'pinteresting'!

I want this to be the best blog you follow; the most informative, fun, engaging, creative and practical blog you've ever seen! I want it to be life-changing! So I am going to commit to sharing those wonderful tips and ideas weekly and consistently! So be on the lookout for some new posts!
